Technical Difficulties....

My flippin camera is broken! Well, not broken, the battery is just dead and I cannot find the cord anywhere.  Why in the world would anyone buy a camera that doesn't take normal batteries? I can't answer that either, I guess we weren't thinking.

So, until I either find my cord, borrow a camera or buy a new camera I will have to write up some posts from pictures I took and never posted.  Everyone ok with that?

I'll start with my Dad's famous meatloaf recipe. I love this meatloaf and because Mr. Lucky hates all meatloaf Dad calls me whenever he makes it.

2 lbs lean ground beef
1 pouch Lipton Onion Soup Mix (I sometimes use Beefy Onion)

2 Eggs
1/2 cup ketchup

1/2 cup Italian seasoned breadcrumbs

Preheat the oven to 350 degrees.  In a large bowl mix together eggs, ketchup, breadcrumbs and soup mix.  Add the ground beef and mix until just combined (you don't want to work the meat too much or it will get tough).

That's Dad!  He agreed to model for me.

That's what it should look like when it's mixed together.

Shape into a 9" x 5" loaf pan and bake for 70 minutes (Dad likes to do a free form and uses a large pan to cook it).  Recipe makes approximately 8 servings.

We always serve this with mashed potatoes and a vegetable. It is comfort food at it's finest.  Whenever I have this meal it brings me back to family dinners as a kid.  Try it, it may just do the same for you.
